VINUM CERETENSIS sherry wines
Vinum ceretensis, Ceret wine, Roman Sherry, has been famous for more than two millennia. Sherry wines are exceptional as they are aged organically under a film of yeast known in Spanish as flor (flower), and for their impressive chromatic and olfactory palette. The wines of this region, also known in Spanish as "generosos" (fortified), are notable for their dry wines such as fino, manzanilla, amontillado, palo cortado or oloroso, and for their sweet wines such as pedro ximénez or moscatel. A tasting-pairing at the ROOF is the best opportunity to learn all about "the mystery of palo cortado", a wine found nowhere else in the world.
